INGREDIENTS ½ cup each of pumpkin, sunflower and sesame seeds ½ cup coconut ½ cup walnuts ½ cup raw cacao powder ½ cup cacao nibs ⅔ cup dates ⅔ cup peanut butter 2 tbsp date syrup 3 tbsp vanilla bean paste ½ tsp sea or Himalayan salt Water to mix
METHOD 1. Place all ingredients in food processor. 2. Add small amounts of water until mixture combines and comes away from the sides of the mixer bowl. 3. Roll into balls and then in coconut if you wish. 4. Refrigerate or freeze.
Makes 50 balls weighing 16 grams each. Yes, I weigh them because I'm a bit of a nerd like that.
